Every Day Is a Second Chance

Hi Everyone,
here is an article that I wrote some time ago but believe that it is more relevant now than it has ever been.

So often at the beginning of the year or in a new situation, we set new resolutions and goals and with everything we have, we declare that this is the time we finally take those actions that will change our lives.

Even though our intentions might be honourable, our minds and bodies sometimes don’t get the same memo, resulting in disappointment – again!

We then roll up into a ball and justify why we didn’t achieve our goals. But really, we knew we wouldn’t. We haven’t up until now, so why would this time be any different?

The problem is that we put such lofty expectations on ourselves that demand we make the required changes in one foul swoop, rather than recognise that the best change happens over time, bit by bit and failure by failure – how exciting!

Some time ago I began to deal with this issue in my own life, in a different way.

Rather than putting pressure on to one moment or one expected change, I began to see every day as a second chance, a new opportunity to take a very small step towards what I wanted to achieve.

So what if I failed yesterday?

Tomorrow is a second chance to try again and take a step closer to achieving my dreams and goals.

It is time we took the pressure off ourselves and realised that life and change is a marathon not a sprint.

You may never get certain moments back, but you can rectify the indecision or wrong decisions that you made if you are brave enough to try again.

Every day is a second chance!

What you didn’t achieve today simply presents an opportunity for tomorrow.

When we start to live like this, we begin to look forward to what can happen, rather than constantly punish ourselves for our lack of achievement at the time.

Every day is a second chance – I don’t know about you, but I can’t wait for tomorrow!

From The COVID Pantry – Lee’s Banana Cake Recipe

Here is another yummy recipe from the Proteus Pantry. Give it a try, it is delicious

Lee’s Banana Cake Recipe

Ingredients

  • 4oz (tbsp) margarine
  • 5oz (tbsp) sugar
  • 2 eggs
  • 3 ripe bananas (mashed)
  • 8oz (tbsp) Self-Raising flour (sifted)
  • 1 (tsp) Bi-carb Soda (dissolved in ¼ cup of boiling water)

Topping

  • Coconut (3 tbsp)
  • Sugar (3 tbsp)
  • Cinnamon (1 tsp)

Method:

  1. Preheat oven to 180 degrees (moderate oven)
  2. Grease and line a cake tin (you can use any shape e.g. loaf, square, round)
  3. Cream together margarine and sugar with a hand beater
  4. Add eggs, mix
  5. Fold in sifted flour
  6. Add Bi-carb and water, mix
  7. Bake for approx. 30 mins
  8. Leave in pan for approx. 15-20 mins to cool – turn out onto a wire rack
  9. While the cake is still warm, spread a small amount of margarine or butter over the top and sprinkle the topping over it.
