What Will You Do Differently This Week?

It is no longer just about being better, because that is short-lived, it is about being different but that is where the challenges start.

In a time when many people are struggling, there are also people and businesses that have taken up the challenge to succeed and in fact flourish, and in many instances that is because they have decided to create something that is different.

Now, it is not easy to be different. It takes a willingness to discard the things and ideas that are obsolete. It can often draw criticism from others. It will certainly make us challenge all of our preconceived thoughts and actions and it will require us to be brave enough to trust ourselves.

So, in this time when all the changes we are having to make are just moving us to a new way of operating that is the same as everyone else and no longer different, what are you actually doing differently that will set you apart?

It is so exhilarating to release our minds to play with different ideas and concepts. To allow ourselves to go to a place where there are no filters and no judgements and come out the other side excited about what could be.

So, my challenge to all of us this week is to get you to take 30 minutes out of your busy life, not to think about what is, but rather what could be, because it is a mindset.

What single change could you or your business make that could set you apart!

What single change could you make in your life that would make you feel better and bring you joy.

We are all capable of thinking this way and so I encourage you this week to recognise that we deserve to be successful if we are prepared to rewire our minds and not settle for mediocrity.

Check out this awesome recipe by our Head of Digital and Design - Joe Stuart. It looks amazing and I can’t wait to try it. Joe promotes himself as a good cook and if this is one of his creations then I think he is right.

Just another thing to make me COVID-19 fatter!

Pumpkin Pie

Pie Dough

  • • 1 1/4 cups all-purpose flour
  • • 1 teaspoon salt
  • • 1/2 cup (115 grams) very cold unsalted butter, cut into cubes
  • • 4 tablespoons ice water

 

Pie Filling

  • • Enough pumpkin to make 2 cups of puree (about a 1/4 of a large pumpkin)
  • • 1 tablespoon of olive oil
  • • 3 large eggs
  • • 2 tablespoons of honey
  • • 3/4 cup (175 ml) heavy whipping cream
  • • 1 teaspoon vanilla extract
  • • 1 1/2 teaspoons ground cinnamon
  • • 1/2 teaspoon ground ginger
  • • 1/4 teaspoon ground cloves
  • • 1/2 teaspoon salt

 

Make The Puree

  1. Cut the pumpkin into big chunks use the olive oil to coat and put onto a tray lined with baking paper. Sprinkle some salt onto the pumpkin. Place it into a preheated oven set to 200c and cook for around 60-80 minutes or until it become soft all the way through.
  2. Let it cool down and remove the skin.
  3. Place into a food processor and blend until it becomes smooth.

 

Pie Crust

  1. Sift the flour and add the salt into a bowl.  You can add a little sugar if you want but don’t need to.
  2. Add the very cold butter (don’t touch with your hands because it needs to stay cold), mix it in and add in the ice-cold water spoon by spoon as you mix it in.
  3. You don’t want too much water, so once the mixture holds together, that’s perfect.
  4. Make the dough into a circle and wrap with cling wrap and roll flat into a disc. Place it into the fridge for 1-2 hours.
  5. Take out of the fridge and roll it into a big disc and put into a pie dish (greased). Then crumple some cooking paper and place on top of the pastry, pour something like beans or rice to weigh down the pie into the dish on top of the paper.
  6. Place into a preheated oven at 200c for 20-30 minutes or until it is golden brown.
  7. Remove the weights and put aside.

 

Make The Filling

  1. Mix the eggs, honey, puree, cream, vanilla extract in a large mixing bowl.  Mix with a whisk. Mix in the spices and salt.
  2. Pour mixture into the pie crust and place into a preheated oven for 15 min at 220c then turn down the heat to 190c and cook for a further 20-30 min.
  3. The pie will be ready when the knife comes out clean.
  4. Leave to rest and cool down. Serve with a dollop of whipped cream.

 

Enjoy! If you have a sweet tooth, feel free to add in some sugar to the mixture and the crust but the process of baking the pumpkin should make it sweet enough.
